Chemistry 130 4 May 2019 Amino Acids and Proteins Conclusion: Our group was tasked to perform Part A- Solubility and Acidity. This portion of the experiment is to identify the acidity and solubility of glycine, lysine, tyrosine and glutamic acid. Amino acids are molecules containing an amine group (-NH2), a carboxylic acid group (- COOH) and a side chain (R group) that varies between different amino acids. The side chain structure determines the class of the amino acid: non-polar, neutral, basic, or acidic. Procedure: - Note the solubility of amino acids by placing 2 mL of distilled water in 4 test tubes, then by placing a few crystals of each amino acid sample. Shake and record your results. - Determine the amino acid solution is acidic or basic by using a litmus paper while testing the solubility in water. Results: It was concluded based on the experiment conducted that the solubility behavior of the polar amino acids is more soluble in water than non-polar, due to presence of amino and carboxyl group which enables amino acids to accept and donate protons (Brønsted–Lowry theory) to aqueous solution, and therefore, to act as acids and bases. This largely depended on 1 the solution pH. Further, It was observed that in the pH range (pH from 2 to 10) there is no significant difference in the solubility.
