Explore the unique world of nutrition and food processing in honduras at zamorano university. This course offers a hands-on approach to product development with relevance for honduran school-luncheon programs. Students will visit processing and product development plants, analytical laboratories, and interact with local industry. Gain first-hand experience in understanding basic nutritional needs and deficiencies in the honduran diet, fundamental food processing techniques, and practical product development and applications. Eligibility: minimum 2.0 gpr & good academic standing, nutr 202/203 or fstc 201 or chem 227/chem 222 or instructor’s approval. Travel dates: may 29th-june 16th, 2012. Scholarships available. Sunn Minimester –Summer 2012 Special Topics in Nutrition, Health and Food Processing in Honduras Bienvenido and welcome to Nutrition, Health and Food Processing in Honduras We look forward to exploring the exciting world of issues related to nutrition and food processing in Honduras, at Zamorano University. One of the most unique things about this course is the learning-by- doing approach taken at Zamorano University and the involvement in product-development with relevance for Honduran school-luncheon programs. We will spend time in the processing and product development plants, analytical laboratories and in the classroom with faculty members from Zamorano University as well as interact with local industry. The techniques you will explore in this course have great relevance to public health, nutrition, food processing in Honduras and other Pan-American countries. In this course, you will study the basic nutritional needs and deficiencies in the Honduran diet, fundamental food processing techniques, and practical product development and applications. Whether you have a certain career goal related to public health or the food industry, this course will provide first-hand experience to anybody interested in foods in countries with specific nutritional needs. The course will be concluded with trips to the mayan ruins in Copan, Roaton and beaches. Eligibility: All Study Abroad programs require a minimum 2.0 GPR & good academic standing, NUTR 202/203 or FSTC 201 or CHEM 227/CHEM 222 or instructor’s approval. Classes and Labs will be taught in English.
