Paella arose in the rural areas of Valencia between the 15th and 16th centuries, due to the need of peasants and shepherds for an easy meal to prepare and with the ingredients they had on hand in the field. Ingredients • 400 g of Parboiled Medium Grain Rice: Ideal for Paella Mahatma® • 1 red pepper cut into strips • 1 large tomato chopped • 2 garlic cloves minced • 6 tablespoons olive oil • 2 tablespoons chopped parsley • 2 tablespoons sweet paprika • 300 g monkfish, cut into pieces • 250g of mussels • 150 g of squid rings • 12 shrimp • 1.5 lt of seafood broth Salt saffron step by step elaboration 1. Clean and peel the prawns. Use the shells and head to make stock. Reserve it. 2. Also clean the squid and chop them into wheels. 3. Also clean the seashells with plenty of water to loosen any sand residue. 4. In a paella pan, or a very large and deep frying pan, sauté the onion, garlic, pepper and tomato chopped into small squares in olive oil.Add a little pepper and salt. 5. Put the squid and then the sea shells. Let them cook for a few minutes. You will see that a broth begins to be made, this is good. 6. Add the 2 cups of rice and stir to mix everything together. Then add 4 cups of the shrimp broth that you made earlier. If it is not enough, complete with water. 7. Stir well. Add a teaspoon of yellow food coloring or the saffron threads and boil for about 3 minutes. 8. Even with liquid in the paellera, add the fresh peas, the prawns and the parsley previously chopped very small. 9. Check for salt and pepper and add if necessary. Let cook until the liquid n is almost dry. At this time you can put some strips of pepper to decorate and some prawns with their shell. 10. Lower the heat and cover. 11. Let cook for 15 minutes and taste the grain. If it is ready, remove from the heat and serve your seafood paella with a splash of olive oil on top to give it even more flavor.
