In consumption terms per habitant, Colombia occupies the first place with an average of 31.2 kg per person per year. The sugar cane is being harvested by selecting the most mature, leaving the rest of the cane in develop until it completes its maturity. The final product is the result of the concentration of the extracted juice of the cane by evaporation until the obtaining of a thick syrup, followed by the solidification of the syrup. The difference between Panela and Sugar lies in the fact that Panela is an absolutely healthy sweetener and balanced for having essential nutrients for the body in the right amount and proportions, the lack of noxious substances for the consumer, and the contribute with enough energy for the metabolic processes development.“ ” The panela consumption is one of the most important characteristics of the social identity of the Colombian nationality.
