Since the 1950s, Israelis have been setting up agricultural settlements (kibbutz) to transform these arid lands into arable land. They brought fertile soil, looked for water even up to 5 km deep, built plants for the desalination of the waters of the Dead Sea and to exploit solar energy. Above all, however, they created scientific research institutes committed to finding cutting-edge solutions for farming while saving water as much as possible. Thus the desert really flourished: today this area produces 60% of Israeli exports of fruit and vegetables, tomatoes, aubergines, dates, citrus fruits or melons.But not only: here, in the middle of the Negev, even aquaculture has developed and today 80% of the fish consumed in Israel comes from this region.
